Mexican Migas con Huevo

Olive oil Corn tortillas cut into squares Onion Garlic Eggs Ground cumin Ground oregano Salt Pepper Cilantro Green Onions

Fry the tortillas

Cut the tortillas into small squares. Heat oil in a large skillet and add them to the pan, then fry until golden brown.

Whisk the eggs

In a medium bowl, whisk the eggs until you have a smooth egg mixture. Set aside until ready to use.

Add the eggs and tortillas

Add onion and garlic to a non-stick pan and cook in the hot oil. Add the egg mixture to the pan. Season with cumin, oregano, salt, and black pepper. Immediately, add the crispy tortilla chips to the pan.

Cook until done

Gently fold the tortillas into the eggs. Cook until done.
