INGREDIENTS

Tomatoes Onion chopped Garlic clove whole Pepper chipotle in adobo sauce Water Chicken bouillon Oil Fideo pasta

Place the tomatoes, onion, garlic, chipotle chile, water, and bouillon in a blender. Blend until smooth. Vegetarian Option: Use vegetable bouillon, or water + salt.

Make the tomato purée

In a large stock pot or a large skillet, heat the olive oil over medium heat. Add the pasta, stirring constantly until it is golden brown. Pour in the tomato purée to the pot with the fried noodles.

 Cook until the liquid has absorbed.

Let it cook

Serve with your favorite toppings. You can top with avocado, Queso Añejo, cotija cheese, queso fresco, chopped and fresh cilantro leaves, or sour cream.
