Mexican Christmas Fruit Salad

INGREDIENTS

Sour cream or crema mexicana Sweetened condensed milk Pineapple reserve juice and pineapple fruit Apples Chopped pecans Shredded coconut Raisins Maraschino cherries drained

Pour the pineapple juice

In a medium-sized bowl, add the sour cream (or crema mexicana) and the pineapple juice from the can.

Add the sweetened condensed milk

Sweetened condensed milk adds a lot of sweetness. If you like your Ensalada Navideña to be more sugary, by all means add the entire container.

Whisk the dressing

With a whisk, blend until smooth and place in the refrigerator until ready to use.

Chop and dice the apples

The main ingredient: Apples! For this recipe, I used Gala apples because they were on sale. Chop and dice.

Place in a large container

In a large container or bowl, add the diced apples, pecans, coconut, and raisins. Add everything to a large bowl.

Add the sweet dressing

Add the cream dressing to the fruit and mix thoroughly to combine.

Top with cherries

Top with Maraschino cherries, be sure to add plenty of cherries. Refrigerate until ready to serve.
