Mexican Breakfast Migas


Olive oil Corn tortillas Diced tomato Diced onion Minced garlic Eggs Ground cumin Ground oregano Salt Pepper Cilantro Green Onions 


Cut the tortillas for this recipe into little squares. Fry them for a few minutes. Remove from the pan and salt the fried tortilla squares.

Heat olive oil and add the tomato, onion, and garlic. Cook for 2-3 minutes. Meanwhile, in a large bowl, add eggs, cumin, oregano, salt, and pepper. Then add to the pan with the fried tortillas.

Scramble the eggs


Top with cilantro and green onions. You can also top this dish with queso fresco, avocado, or Mexican crema and serve with refried beans.
