Chorizo Cheese Dip

INGREDIENTS

Olive oil Mexican chorizo Onion diced All purpose flour Shredded cheese Milk Salt

I’m using lean beef chorizo. If you’re using pork chorizo, be sure to drain it. Remove the chorizo from the skillet after cooked.

Cook the chorizo

Cook for about 1 minute on a little cooking chorizo fat, stirring constantly.

Add the diced onion

Next add, one tablespoon of white, all-purpose flour. Stir and cook for 1 minute.

Then slowly and gradually, add the milk. Stir constantly. It will start to bubble

I used 2 cups of shredded Monterey Jack, it started melting quickly. You can also use Queso Oaxaca.

Add the cheese
