Break the pork rinds into small, bite-sized pieces and set aside until use.
Heat oil in a large skillet, add salsa verde, and let it come to a simmer. Add the pork rinds and jalapeño (if using).
Lower the heat, cover, and let simmer until pork rinds are soft. Add more chicken broth or water if it's too thick. Top with cilantro.
