Instructions

To make the mole sauce:

  • Add half a container of the mole paste and the chicken broth to a stock pot.
  • Bring to a simmer.
  • Stir occasionally until mole paste dissolves.
  • Add water and chocolate tablet.
  • Stir until the chocolate melts.

To Assemble Nachos:

  • Add foil paper to a large sheet pan.
  • Layer ½ a bag of tortilla chips.
  • Top with cooked chicken.
  • Drizzle the mole sauce over the chicken.
  • Add the cheese and red onion.
  • Place under the broiler for 7-10 minutes, or until cheese is melted.
  • Drizzle sour cream and top with chopped cilantro.
  • Serve immediately.

Notes

Serve right away, or the chips will get soggy.
Use the mole sauce immediately, or it will thicken up. If it does, add a splash of broth (or water) and stir to thin out.
