Camarones Enchipotlados is made of tender shrimp in a rich tomato sauce that’s jam-packed with flavor. Slightly spicy, but it can be easily adapted to your taste. All ready in under 20 MINUTES!
Servings: 4 people
- 2 tomatoes
- 5 cups water (divided)
- 1 garlic clove
- 2 chipotle pepper in adobo sauce
- 1 tspn salt
- 1 tbsp olive oil
- 1/4 onion diced
- 1 lb shrimp large-sized
In a stock pot, add the tomatoes and 4 cups water.
Cover and bring to a boil.
Simmer for 4-5 minutes, or until soft.
Discard the water.
Add the boiled tomatoes to a blender.
To the blender, add 1 cup water, chipotle, and salt.
Blend until smooth.
Heat the oil olive in a large skillet.
Add the onion. Saute for 1 minute.
Add the chipotle tomato sauce to the skillet.
Bring to a simmer.
Add the shrimp.
Cook for 4-5 minutes, or until shrimp are pink.
Serve immediately, and enjoy!
Use Your Pantry! Omit the tomatoes, onion, garlic, and water. Instead, use a can of tomato sauce.
For a thicker sauce, simmer it in the skillet longer before adding the shrimp.
Be sure to turn off the heat once the shrimp turn pink and serve right away. If not, they will become rubbery.
