Set aside ¼ cup of the pineapple. We'll need it when we serve.
In a blender combine pineapple and ice. Blend until smooth.
In a bowl combine coconut milk and sugar. Pour into the pineapple smoothie and blend for 1– 2 minutes.
Serve in glasses.
Fill ½ of the glass with the pineapple Pina colada.
Top with pieces of fresh pineapple and a stick of fresh mint.

- Swap out coconut milk for almond milk, regular milk, or coconut water.
- To use frozen pineapple, remove from the freezer and thaw slightly before adding to the blender.
