  • Set aside ¼ cup of the pineapple. We'll need it when we serve.
  • In a blender combine pineapple and ice. Blend until smooth.
  • In a bowl combine coconut milk and sugar. Pour into the pineapple smoothie and blend for 1– 2 minutes.
  • Serve in glasses.
  • Fill ½ of the glass with the pineapple Pina colada.
  • Top with pieces of fresh pineapple and a stick of fresh mint.

Notes

Pro Tips
  • Swap out coconut milk for almond milk, regular milk, or coconut water. 
  • To use frozen pineapple, remove from the freezer and thaw slightly before adding to the blender. 
  • Make a protein smoothie! Add one or two scoops of unflavored protein powder to the blender. Vanilla protein powder works too! 
  • Instead of sugar, use a sugar substitute like Stevia, maple syrup, or raw cane sugar.
