Notes

Which cut of beef should I use?
Flap steak, flank steak, and skirt steak all work well for carne asada. Honestly, I use whichever one is on sale that week! Cooking time will vary depending on the cut and thickness, so use the internal temperature as your best guide.
Substitutions for Marinade:
  • Swap out the fresh onion for 1 tablespoon onion powder, and the fresh garlic for 1 tablespoon garlic powder.
  • Instead of salt, add a tablespoon of soy sauce.
  • We are using fresh oranges to make orange juice. Substitute for store-bought juice.
What is the best grill temp for carne asada?
Heat the grill to 450°F. For medium-rare, cook the beef until it reaches an internal temperature of 130°F. A thin steak may take about 5–6 minutes per side, while a thicker cut may take longer. For medium, cook to your preferred internal temperature.
How to Keep the Meat Warm:
Place the grilled meat in a large dish that's oven-proof and cover with aluminum foil. Once you’re done grilling, place the meat in a 275ºF warm oven until you’re ready to serve.
