Cilantro Chimichurri

Cilantro Chimichurri is an all-purpose condiment that is zesty and herbal beyond imagination. Drizzle it over grilled meats, roasted vegetables, or use it as a vibrant dip with your favorite bread.

Ingredients

  • 1 cup fresh cilantro leaves
  • ½ red onion chopped
  • 3 garlic cloves chopped
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ red bell bell pepper chopped
  • 1 teaspoon red chili flakes optional

Instructions

  • In a food processor or blender, blend the cilantro, and garlic until finely chopped. Add the chopped onion and chopped red bell pepper.
  • Add the olive oil, red wine vinegar, lime juice, salt, black pepper and red chili flakes (if using).
  • Mix until well combined.
  • Taste and adjust seasoning as needed.
  • Transfer the chimichurri to a jar and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
  • Serve with grilled meat, chicken, fish or vegetables.
