For the Rub:
Mix all the ingredients together and set aside until ready to use.
For the Chipotle BBQ Sauce:
Heat olive oil to the a deep stock pan.
Add onion and cook until translucent.
Add all the remaining ingredients for the BBQ sauce and let simmer for 30 minutes.
Set aside until ready to use.
For the Ribs:
Rub the ribs with the rub on the front and back.
Cover and let sit for 24 hours (minimum 6 hours) in the refrigerator.
Preheat oven at 250 degrees F.
Cook covered for 2 hours.
The ribs will be tender.
Preheat the grill at 350 degrees F.
Note: You can do this in the oven too.
Brush the Chipotle BBQ sauce on the meat side.
Cook for 15 minutes.
Turn the meat over.
Brush again with Chipotle BBQ sauce.
Cook for 15 minutes.
Turn over the meat again and add more Chipotle BBQ sauce.
minutes total of cooking on the grill or oven.
Remove from heat and let cool.
Add more Chipotle BBQ sauce and cut into individual pieces.
