Veggies and Bean Tacos

INGREDIENTS

Olive oil Red pepper Zucchini Onion Cooked pinto beans Bouillon cube  Ground cumin Ground oregano Salt and pepper Tortillas Green onions sliced Cilantro  Cheddar cheese Sour cream

If you’re not into waiting around for-EVAH for beans to cook, there are canned beans. You can buy them online (Affiliate)

Canned Pinto Beans

Make the bean mixture

In a deep saucepan, heat oil. Add red pepper, zucchini, onion, salt and pepper. Cook, then add cooked pinto beans and bean juice.

Let simmer

Add bouillon, cumin, and oregano. Let simmer and taste for salt. The liquid will have thickened. Heat the tortillas.

Assemble and enjoy!

Top tortillas with bean mixture and the remaining ingredients. You can serve them with Mexican rice or a green salad. Yum!
