While the meat is cooking, warm up the tortillas in a separate skillet.
Let the meat rest before slicing into small strips. You have to let the meat rest, or all the juices will drain out.
Cook the egg sunny side up. Do you see the color of the yolk? It’s beautifully deep amber orange.
Add a thin layer of refried beans to the tortilla. The beans act as glue for the rest of the ingredients.
Top with steak slices and salsa. I used green salsa verde, but you can also use Mexican red salsa.
Top with a sunny side-up egg and, finally, sprinkle chopped cilantro and queso fresco. Hope you enjoy!
