Steak Chimichurri Quesadillas


Italian parsley leaves Cilantro Garlic Dried oregano Lemon juice Pinch of Cayenne or red pepper flakes Salt Freshly ground black pepper Extra-virgin olive oil Leftover steak or pot roast chopped Onion Flour tortillas Shredded Jack cheese

Make the chimichurri


Mix all the ingredients for the chimichurri sauce and set aside. Adjust the amount of garlic to your taste.

Assemble and serve


Heat the meat and onion together and mix it with the chimichurri sauce. Place a flour tortilla on a skillet. Add cheese, meat mixture, and top with another tortilla. Cook until the cheese is melted. Serve with remaining chimichurri sauce.
