Scallops Red Onion Cilantro Avocado Mango Jalapeño Lime Salt
If you can’t find fresh scallops, use frozen scallops. They will absorb the lime juice, removing that frozen taste, and come already cleaned.
Add all the ingredients to a large bowl, and mix them together. Cover and refrigerate for 1 hour.
Ceviche only needs 1 hour of marinating. However, you can make the dish the night before. Serve and enjoy.
