Red Beef Pozole

INGREDIENTS

Place the beef, onion, garlic, salt, pepper, and bay leaves in a large stockpot and add water. Cook for 45 minutes.

Rehydrate the dried chiles.  Add them along with the sauce ingredients to a blender and blend until smooth.

Make the red sauce

Heat the oil and slowly add the sauce. Strain it into the pot.  Add the beef and broth and cook for 20 minutes.

Add the hominy to the pot. Cook for 10 minutes.

Simply top with your favorite toppings and enjoy!
