Rajas con Crema

INGREDIENTS

Butter Onion Poblano pepper Cream cheese package Sour Cream (or crema mexicana) Monterey Jack (or Oaxaca Cheese) Salt

Prepare the rajas

Roast your poblano peppers and steam them. Then, remove the skin, cut open to remove the seeds, and slice into strips.

Add the onions

Once the onions are translucent, add the roasted poblano strips to the pan. Mix to combine.

Make the cream sauce

Add the cream cheese. Keep stirring until the cream cheese “melts.” Add the sour cream, salt, and cheese. Stir and cook on low until the cheese is melted.

Ready to serve

Serve with corn tortillas, refried Beans or ensalada de nopalitos. Ooey gooey and cheesy perfection that’s hard to beat!
