Butter Brown sugar Pumpkin purée Ground cinnamon Ground cloves All-purpose flour Pre-made pie crusts Egg Splash of water
In a large pan, melt the butter and add the brown sugar. Stir to combine and cook for 1 minute. Then, add the pumpkin, cinnamon, and cloves. Stir and cook for 5 minutes. Let cool.
Roll out the pie crust and cut out a circle. Add the filling to the middle of each circle. Fold one end of the circle over to close, then, with a fork, press the edges to close. Brush with the egg wash.
The hardest part is the wait. They take 15 minutes to bake, and then you have to wait for them to cool down.
Pumpkin Empanadas were my favorite as a kid. Enjoy these yummy, sweet treats.
