Start by mixing the eggs and sugar together in a large bowl of a stand mixer. Mix at medium speed and slowly drizzle in the oil. Add the dry ingredients and mix.
Fill your red cupcake liners 3/4 of the way up. Bake until a toothpick comes out clean. Cool on a wire rack.
It’s easy to spot these baked goods because of their classic red liners. Serve with cafe de olla or a big cup of champurrado.
