Heat oil in a large skillet, sauté habaneros for 3 minutes, then add onion and garlic and cook for 1 more minute; add mango and water, cook for 2-3 minutes, or use a broiler on a baking sheet.
Take the cooked ingredients out of the skillet, transfer them to a big bowl, and allow them to cool for a few minutes, noting that the spiciness can vary. This salsa is very spicy.
Put the ingredients in a blender, add water and blend until smooth. Add salt, taste and adjust seasoning; for chunky salsa, pulse in food processor.
