Huevos a la Mexicana

Whisk the eggs with salt, pepper, and a pinch of ground cumin.

In a large skillet, heat the olive oil. Add the jalapeno, tomato, onion, salt and pepper. Cook, and add the whisked eggs to the pan.  Stir frequently and gently until the beaten eggs are cooked.

Huevos a la Mexicana pairs well with warm tortillas, refried beans, avocado slices, or even grilled nopal. They’re also perfect for filling breakfast burritos or topping tostadas.

Some people like adding chorizo, ham, bacon, hot dog slices, etc. You can also add other veggies like green onions, mushrooms, or corn to make it even more hearty.
