Crack open the tamarind pods, peel the shells and fibers and put them in a large stock pot with water. Cover and bring to a boil.
Strain, discarding the seeds and any fibers, and set mixture aside. In a large saucepan, add onion, the tamarind pulp and the rest of the ingredients. Cook.
