Red Enchiladas


Rehydrate the Chiles


Cut off the stem and remove seeds and veins, then place the chiles in a stockpot. Cover with water and bring to a boil.

Prepare the sauce


Add all the rehydrated chiles and sauce ingredients into a blender, then add water and blend until smooth.

Strain the sauce


Heat oil in a pot and carefully place the strainer over it. Strain the sauce. Discard any bits that remain in the strainer.

Fry the tortillas


Fry the tortillas for 1-2 minutes on each side and place them on paper towels to drain any excess oil.

Dip into the sauce


Dip the fried tortilla into the sauce and add the cheese to the center of the tortilla.

Fold them and it's done!


Fold the tortilla and serve immediately.  See that? Simply delicious and simply irresistible.
