Tortas Ahogadas

INGREDIENTS

Guajillo chiles Chile de árbol Onion Garlic Water Tomatoes Olive oil Pork chopped Birotes or bolillos

Rehydrate guajillo chile and chile de arbol. Add onion and garlic to the pot at the very end for 5 minutes.

Boil the sauce ingredients

Roast the tomatoes on the stove. You can roast them in the oven too. Set them aside until they are cool enough to touch.

Place everything in the blender and blend until smooth.

Heat some oil in a stockpot and strain the sauce.

Cook for only a few minutes and set aside. Let this cool completely.

Using a deep plate or bowl, cut the bread in half. Add the pork to one half and top with the other half.

Assemble the sandwich

Ladle a spoonful of sauce over the sandwich. Add more sauce around the sandwich.

Serve in deep plate or bowl

Lastly, top your Drowned Sandwiches (Tortas Ahogadas) with pickled onions.
