Remove any twigs, rocks, or hard dirt. Don't skip this step. Rinse and repeat, or they will taste like mud.
Soak them overnight, or add the dried beans and 2 inches of water above the beans and bring to a boil. Turn heat off and soak for one hour.
In a large stockpot, add enough water to cover the beans, and add onion and garlic. Bring to a boil, cover, and reduce heat to low. Add salt. Cook until they are tender.
