Rinse and pat dry the pork chops.
Season both sides with salt, pepper, cumin, and oregano.
Heat oil in a large skillet.
Sear the pork chops on all sides.
About 4-5 minutes on each side.
Remove from the skillet.
Add the tomatoes, onion, and serrano pepper.
Cook for 2-3 minutes.
Stir occasionally.
Add the water and mix to combine.
Return the pork chops to the skillet.
Cover and cook for 15-20 minutes, or until pork is fully cooked.
Cooked Pork Temperature: ranges from 145 to 160 degrees F, depending on the cut of pork. Pork chops should be cooked to a minimum temperature of 145 degrees F followed by a three minute rest.
Instead of a serrrano pepper, you can also use a jalapeno.
