Machaca Con Huevos
Machaca con Huevos (Machaca with Eggs) is an easy and tasty breakfast made with dried meat and a scrambled egg mixture. Full of flavor and ready in minutes.
- 2 tablespoon Mazola® Corn Oil
- ¼ onion diced
- 1 jalapeño finely diced
- 1 1 tomato diced
- 1 clove garlic minced
- 1 3.5 oz dried machaca
- 6 eggs
- ½ teaspoon Salt
- ¼ cilantro bunch
Heat oil in a large skillet.
Add onion and jalapeno to a skillet.
Cook for 1 minute.
Add the tomato.
Cook for 3 minutes.
Add the machaca and garlic.
Cook for 5 minutes.
In a separate bowl, whisk the eggs.
Add the eggs and salt to the skillet.
Cook for 2 minutes, or until eggs are fully cooked.
Top with cilantro.
Potatoes, Corn, Red bell peppers, Spinach
Serve with tortillas and salsa.
