Healthy Waldorf Chicken Salad Sandwich
This Healthy Waldorf Chicken Salad Sandwich is incredibly delicious. Not only that, but it's HALF the calories of the traditional recipe.
- For Sandwich:
- 2 chicken breasts cooked chopped
- 1 celery finely diced
- 2 green onion green part only, finely diced
- 1 apple diced
- ½ cup grapes halved
- ½ cup walnuts chopped
- Cilantro as desired (can substitute with parsley)
- Bread of your choice
- For Dressing:
- Juice of ½ lime
- ½ cup Greek yogurt
- 1 tablespoon neufchatel
- 1 tablespoon fat free milk
- Salt and pepper
Add all the ingredients for the sandwich in a big bowl.
In a separate bowl, whisk the ingredients for the dressing until smooth.
Add dressing to the sandwich ingredients until well combined.
Put mixture in bread of your choice.
