This Healthy Waldorf Chicken Salad Sandwich is incredibly delicious. Not only that, but it's HALF the calories of the traditional recipe.

Ingredients

  • For Sandwich:
  • 2 chicken breasts cooked chopped
  • 1 celery finely diced
  • 2 green onion green part only, finely diced
  • 1 apple diced
  • ½ cup grapes halved
  • ½ cup walnuts chopped
  • Cilantro as desired (can substitute with parsley)
  • Bread of your choice
  • For Dressing:
  • Juice of ½ lime
  • ½ cup Greek yogurt
  • 1 tablespoon neufchatel
  • 1 tablespoon fat free milk
  • Salt and pepper

Instructions

  • Add all the ingredients for the sandwich in a big bowl.
  • In a separate bowl, whisk the ingredients for the dressing until smooth.
  • Add dressing to the sandwich ingredients until well combined.
  • Put mixture in bread of your choice.
  • Enjoy.
