Steak Salad with Low Calorie Blue Cheese Dressing
Grilled or made on the stove, this Steak Salad with Low Calorie Blue Cheese Dressing is so good. Savory and remarkably tender beef. It's something to really sink your teeth into. Add some low calorie dressing, and you've got a recipe that will make your tummy very happy.
- 2 boneless ribeye steaks- thinly sliced
- salt and pepper
- 1/2 head of lettuce chopped
- Any additional veggies
- For the Low Calorie Blue Cheese Dressing:
- 4 ounces of blue cheese crumbles
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 1 grilled red pepper charred and peeled, or 1 jar red peppers (drained)
- 1 tablespoon chives chopped
- ¼ cup greek yogurt
- ¼ cup light mayonnaise
- 1 tablespoon lemon juice
- pinch of cayenne
Season the steak with salt and pepper.
Cook for 3-4 minutes on each side, or to desired doneness.
Let rest before slicing.
For the blue cheese dressing:
Put all the ingredients in the food processor and pulse. Or, mix all the ingredients together in a small bowl.
On a plate, add lettuce, veggies, and steak. Drizzle with dressing.
