- 2 tablespoons oil
- 1 whole chicken cut up
- Zest of 1 lemon
- Juice of 1 lemon
- 1 garlic minced
- ¼ onion diced
- 2 cups chicken broth
- Salt and pepper
- 1 handful of cilantro chopped (optional)
- 1 handful of parsley chopped (optional)
Heat oil in large pan.
Season chicken with salt and pepper.
Sear on all sides.
Remove from pan.
Add onion and garlic to pan. Cook for one minute.
Return chicken to pan.
Add chicken broth, zest, and lemon juice.
Taste for salt.
Put a lid on the pan. Lower heat to medium-high.
Cook until ready.
Add cilantro and parsley, if using.
Serve and enjoy.
