Ingredients

  • 2 tablespoons oil
  • 1 whole chicken cut up
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 garlic minced
  • ¼ onion diced
  • 2 cups chicken broth
  • Salt and pepper
  • 1 handful of cilantro chopped (optional)
  • 1 handful of parsley chopped (optional)

Instructions

  • Heat oil in large pan.
  • Season chicken with salt and pepper.
  • Sear on all sides.
  • Remove from pan.
  • Add onion and garlic to pan. Cook for one minute.
  • Return chicken to pan.
  • Add chicken broth, zest, and lemon juice.
  • Taste for salt.
  • Put a lid on the pan. Lower heat to medium-high.
  • Cook until ready.
  • Add cilantro and parsley, if using.
  • Serve and enjoy.
