  • Preheat oven to 375 degrees F.
  • Season the beef with salt and pepper
  • Heat oil in a large cast iron skillet over medium-high heat.
  • Sear the meat on all sides.
  • Put the skillet in the oven for about 40 minutes, or until the thermometer reads 130 degrees F.
  • Remove the roast and let rest on the cutting board for 10 minutes.
  • In the meantime, return the skillet to a low heat on the stove.
  • Add onions and cook for 1 minute.
  • Mix all the balsamic vinegar, beef broth, honey, and Worcestershire sauce in a bowl and add to the skillet, scrapping the browned bits on the bottom of the skillet. About 15 minutes.
  • Taste for salt and pepper.
  • Add butter.
  • Slice beef.
  • Serve and top with balsamic vinegar pan sauce.
  • Enjoy!
