Chorizo and Egg Tostada

Ingredients

  • ¼ cup oil + 2 tablespoons (divided)
  • 4 corn tortillas
  • ½ package of pork chorizo casing removed
  • ¼ onion finely diced
  • 4 eggs
  • Cilantro chopped
  • Avocado sliced
  • Queso fresco crumbled

Instructions

  • Heat ¼ cup oil in a pan.
  • Add one tortilla at a time.
  • Fry for 2 minutes on each side.
  • Drain on a paper towel.
  • Then repeat with the remaining 3 tortillas.
  • Set tostadas aside until ready to use.
  • Cook chorizo in a large pan. About 7 minutes.
  • Add onion to the pan. Cook for another 3 minutes.
  • Remove from pan.
  • Drain on a paper towel.
  • Heat 2 tablespoons oil in separate pan, and cook eggs sunny-side-up.
  • Set aside.
  • To assemble, add a thin layer of chorizo to the tostada, top with one egg, cilantro, and queso fresco.
  • Serve with avocado on the side.
  • Enjoy.

Notes

You can use tortillas instead of tostadas.
Drain the fat once it’s cooked.
