Mexican Chicken Salad with Chipotle Lime Dressing

Ingredients

  • 1 1/2 cup cooked chicken chopped
  • 3-4 cups lettuce chopped
  • 1 to mato diced
  • 1 cup cooked corn kernels
  • 1 cup cooked pinto beans
  • Queso Fresco crumbles
  • For Chipotle Lime Dressing:
  • Juice of 1 Lime
  • Chipotle finely chopped
  • 1/2 cup sour cream
  • salt

Instructions

  • To each plate, add lettuce.
  • Top with cooked chicken, tomato, corn, pinto beans, and pinto beans.
  • Add any other desired toppings
  • Set plates aside.
  • For the Chipotle Lime Dressing, mix lime juice, chipotle, and sour cream in a bowl.
  • Drizzle dressing on top of salad.
  • Enjoy!

Notes

You can use leftover chicken for this recipe.
You can add peas, pickled carrots, green beans, Spanish olives, avocado, etc.
