- 1 1/2 cup cooked chicken chopped
- 3-4 cups lettuce chopped
- 1 to mato diced
- 1 cup cooked corn kernels
- 1 cup cooked pinto beans
- Queso Fresco crumbles
- For Chipotle Lime Dressing:
- Juice of 1 Lime
- Chipotle finely chopped
- 1/2 cup sour cream
To each plate, add lettuce.
Top with cooked chicken, tomato, corn, pinto beans, and pinto beans.
Add any other desired toppings
Set plates aside.
For the Chipotle Lime Dressing, mix lime juice, chipotle, and sour cream in a bowl.
Drizzle dressing on top of salad.
You can use leftover chicken for this recipe.
You can add peas, pickled carrots, green beans, Spanish olives, avocado, etc.
