Spice-Rubbed Ribs with Chipotle BBQ Sauce

Spice-Rubbed Ribs with Chipotle BBQ Sauce is a bold taste of sweet and spicy flavors. Smoky and delicious. It’s what BBQ dreams are made of.

  • For the Rub:
  • Mix all the ingredients together and set aside until ready to use.
  • For the Chipotle BBQ Sauce:
  • Heat olive oil to the a deep stock pan.
  • Add onion and cook until translucent.
  • Add all the remaining ingredients for the BBQ sauce and let simmer for 30 minutes.
  • Set aside until ready to use.
  • For the Ribs:
  • Rub the ribs with the rub on the front and back.
  • Cover and let sit for 24 hours (minimum 6 hours) in the refrigerator.
  • Preheat oven at 250 degrees F.
  • Cook covered for 2 hours.
  • The ribs will be tender.
  • Preheat the grill at 350 degrees F.
  • Note: You can do this in the oven too.
  • Brush the Chipotle BBQ sauce on the meat side.
  • Cook for 15 minutes.
  • Turn the meat over.
  • Brush again with Chipotle BBQ sauce.
  • Cook for 15 minutes.
  • Turn over the meat again and add more Chipotle BBQ sauce.
  • minutes total of cooking on the grill or oven.
  • Remove from heat and let cool.
  • Add more Chipotle BBQ sauce and cut into individual pieces.
  • Serve and Enjoy!


Make a big batch and store it in a sealable bag. You can add it to chicken or potatoes. 
Make little slashes to the meat with the edge of a sharp knife before you add the rub. The ribs will absorb the rub better.
