Chicken Fajitas

Chicken Fajitas make for a yummy and easy weeknight meal. Full of delicious flavors, this dish will soon be a family dinner favorite.

  • 1 lb chicken strips
  • 4 tablespoons olive oil divided
  • Juice of 2 limes
  • 1 garlic clove finely minced
  • 1 tablespoon ground cumin
  • ¼ tablespoon ground oregano
  • 1/2 teaspoon ground cayenne
  • 1/2 teaspoon chili powder
  • Salt and pepper
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • ½ onion sliced


  • In a large dish, add chicken strips, 2 tablespoons olive oil, lime juice, garlic, cumin, oregano, cayenne, chili powder, salt, and pepper.
  • Cover and place in the fridge.
  • Marinate for 1-4 hours.
  • In a large skillet, heat 2 tablespoons of olive oil.
  • Add chicken.
  • Cook for 4 minutes.
  • Add the peppers and the onion.
  • Stir to combine.
  • Cook for an additional 5-6 minutes.
  • Serve with tortillas and your favorite salsa.
  • Enjoy!


You can find chicken strips at the grocery store. If not, slice up a boneless chicken breast to make your own strips.
The meat is marinated for at least an hour to develop the flavors.
Serve with corn or  flour tortillas and your favorite salsa.
