Healthier Enchiladas Suizas

These "Healthier" Enchiladas Suizas are creamy and perfect for weeknight meals. By not frying the tortillas, you significantly cut the calories but won't miss the deliciousness.

Ingredients

  • 2 cups salsa verde
  • 1 cup non-fat yogurt
  • 1 cup Crema Mexicana or Half and Half
  • Salt
  • 10 corn tortillas
  • 1 cup chicken cooked and shredded
  • 1 cup Monterey jack cheese shredded

Instructions

  • Add salsa verde, yogurt, crema mexicana, and salt in a blender.
  • Blend until smooth.
  • Warm up tortillas in the microwave for 1 minute, or until pliable.
  • Add chicken to the center of a tortilla.
  • Roll up and place in the casserole.
  • Repeat with each tortilla.
  • Pour sauce over the casserole.
  • Add a layer of cheese to the top of the casserole.
  • Place casserole in 350 degrees oven
  • Bake uncovered for 15 minutes, or until top is golden brown.
  • Serve with salad on the side.

Notes

By not frying the tortillas, you significantly cut the calories 
For the filling, I’m using leftover chicken. You can also use a rotisserie chicken – skin removed and using breast meat
