Atún a la Mexicana

Ingredients

  • 1 tablespoon olive oil
  • ¼ onion diced
  • 1 jalapeno finely diced
  • 1 tomato diced
  • 2 cans tuna drained
  • 1 tspn salt

Instructions

  • Heat olive oil in a skillet.
  • Saute the onion and jalapeno.
  • Cook for 1 minute. Stirring constantly.
  • Add the tomato.
  • Stir to combine
  • Cook for 3 minutes.
  • Add the drained cans of tuna.
  • Season with salt.
  • Stir to combine.
  • Cook for 5 minutes.

Notes

Swap Options:
  • Use 1 8-ounce can of tomato sauce instead of fresh tomato.
  • Use pickled jalapeno instead of fresh jalapeno.
  • 1 teaspoon of onion powder instead of fresh onion.
You can also add a pinch of oregano and a squeeze of lime juice for some added flavor.
