- 8 Happy Egg Co. Eggs
- 1 lb pre-marinated carne asada
- 8 tortillas
- ½ cup salsa verde
- 1 cup refried pinto beans
- chopped cilantro topping
- crumbled queso fresco topping
In a large skillet, cook the carne asada.
About 4 minutes on each side.
Remove from skillet and let rest before slicing.
In a separate skillet, heat the tortillas.
Set aside until ready to use.
Warm up the refried beans, and set them aside.
Chop carne asada into bite-size pieces.
Cook the eggs individually.
Set aside the eggs until ready to use.
To assemble Steak Huevos Rancheros:
Spread a thin layer of refried beans to a tortilla.
Top with chopped steak and salsa.
Add sunny-side up egg, cilantro, and queso fresco.
Repeat until there are no more tortillas.
Serve with extra salsa. Enjoy!
I used already marinated carne asada. You can marinate the meat on your own, but a lot of stores already sell prepared carne asada.
Make sure to tent the meat with aluminum foil to keep warm.
