In a large skillet, melt the butter.
Add the garlic.
Cook for 1 minute, stirring frequently.Be careful not to burn. Add the chile guajillo and chile de arbol (if using).Cook for 1 minute, stirring frequently. Add the shrimp, lime juice, white wine, and salt.
Cook for 5-6 minutes, or until shrimp is pink and fully cooked.
HOW TO ADJUST THE HEAT:
- For some spice, just add one chile de arbol.
- For very spicy, add two to three chile de arbol.
- For not spicy but flavorful, omit using the chile de arbol.
You can also use chicken or vegetable stock instead of the white wine.
For a completely lactose-free recipe, use olive oil instead of butter.
