Chicken in Creamy Chipotle Sauce (Pollo al Chipotle)

Chicken in Creamy Chipotle Sauce, or Pollo al Chipotle, is a yummy recipe with a rich, thick sauce. Not too spicy and always a hit with the family.

Ingredients

  • 2 skinless boneless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • ¼ onion diced
  • 1 garlic finely minced
  • 1 7-oz can Chipotle Peppers in Adobo (or less depending on taste)
  • 1 cup crema mexicana or heavy cream
  • 1 cup milk
  • 1 teaspoon Salt

Instructions

  • Heat the oil in a large skillet
  • Add salt and pepper to the chicken strips.
  • Add chicken to the pan.
  • Cook the chicken for 4 minutes.
  • Add onion and garlic.
  • Cook for 2 more minutes or until chicken is no longer pink and the onion is translucent.
  • Meanwhile, in a blender, add the chipotle peppers, crema mexicana, milk, and salt.
  • Blend until smooth.
  • Taste for salt.
  • Add sauce to the skillet.
  • Bring to a gentle simmer.
  • Let simmer for 2 minutes.
  • Turn heat off.
  • Serve with white rice.
  • Enjoy!

Notes

Use less chipotle peppers for a not-so-spicy sauce. For a spicier sauce, add more chipotle. 
Also, you can use whatever cut of chicken you like.
