- 2 skinless boneless chicken breasts, sliced into strips
- 2 tablespoons olive oil
- ¼ onion diced
- 1 garlic finely minced
- 1 7-oz can Chipotle Peppers in Adobo (or less depending on taste)
- 1 cup crema mexicana or heavy cream
- 1 cup milk
- 1 teaspoon Salt
Heat the oil in a large skillet
Add salt and pepper to the chicken strips.
Add chicken to the pan.
Cook the chicken for 4 minutes.
Add onion and garlic.
Cook for 2 more minutes or until chicken is no longer pink and the onion is translucent.
Meanwhile, in a blender, add the chipotle peppers, crema mexicana, milk, and salt.
Blend until smooth.
Taste for salt.
Add sauce to the skillet.
Bring to a gentle simmer.
Let simmer for 2 minutes.
Turn heat off.
Serve with white rice.
Enjoy!
Use less chipotle peppers for a not-so-spicy sauce. For a spicier sauce, add more chipotle.
Also, you can use whatever cut of chicken you like.
