Flour tortillas Oil Portobello Mushroom Onion Tomato Zucchini Red pepper Green pepper Garlic Red salsa Monterey Jack cheese
Chop the Portobello mushrooms, tomatoes, onion, zucchini, red pepper, green pepper and the garlic.
Heat oil in a skillet, add the chopped ingredients. Sauté everything until onions are translucent. Add salsa, cover and cook.
You can prepare your own Salsa Roja, but you can use the ones sold in the supermarket. You can also buy it online (Affiliate).
Add tortilla to the griddle. Add cheese, filling, and top with another tortilla. Cook, making sure the tortilla does not burn. Flip and cook until cheese is melted.
Cut the quesadillas into wedges and serve with your favorite salsa. Hope you enjoy!
