Oil Pork loin Salt Pepper Tomatillos Onion Garlic gloves Serrano chile Cilantro Chicken broth (or water)
Season the pork pieces with salt and pepper. Heat the oil and sear the meat in a large pot. Take your time in this.
The meat should look like in the picture, but while you are searing the meat, let's make the salsa verde.
Roast the chiles, onion, and garlic on the stove. You can also buy pre-made salsa verde for even easier cooking.
Add all the roasted ingredients into the blender, and blend until smooth. Set aside until ready to use.
Add the salsa verde to the sear meat, add the chicken broth and taste salt. Place a lid on the pot and let cook for 1 hour.
This Pork Chile Verde is incredibly tasty til the last bite. Serve with Mexican rice and pinto beans, or you can prepare a chile verde burrito.
