Enchiladas Dulces

INGREDIENTS

Ancho Chiles Guajillo Chiles Water Cinnamon stick Salt Mexican Chocolate tablet Sugar Oil Corn tortillas Queso Fresco package Sliced onion 

Rehydrate the chiles

Cut the stems off and cut open the chiles. Remove the seeds. Rehydrate the chiles and add them to the blender. Add water to the blender.

Blend until smooth

Blend until smooth and strain the sauce over the stock pot. Add a piece of whole cinnamon, bring to a boil, then add the Mexican chocolate tablet, salt, and sugar.

Assemble the enchiladas

Fry each tortilla on both sides. Dip the tortilla into the sauce and immediately put it on a plate. Add crumbled queso fresco and repeat with all the tortillas until done.

Ready to serve

Top with more queso fresco and sliced onions. Enjoy!
