The cooler months are here, and that means soup!
These two soup recipes are yummy and EASY! Both are classic Mexican soups with tons of flavor and deeply satisfying.
Not only that, but I got all the ingredients from ALDI.
Crema de Frijol Negro
- Drain 1 can of black beans.
- Blend the beans, ½ teaspoon salt, 1 chipotle pepper in adobo, and 4 cups chicken broth.
- Bring the bean mixture to a simmer and add ½ cup sour cream.
- Simmer for 5 minutes and serve.
I grew up on this soup. There are many, many ways to make it.
My grandmother would sometimes add bacon or vegetables. Adjust as you see fit.
I bought a can of Simply Nature Organic Black Beans for only $0.89 cents. At another grocery store in my area, I would have paid double the price.

This soup can last up to 5 days in the fridge, and it freezes extremely well.

Caldo de Queso
- Heat 1 tbsp olive oil and cook 2 potatoes (diced) for 4-5 minutes.
- Add 2 roasted poblano peppers (diced) and ¼ onion (diced). Cook for 2 minutes.
- Add 1 10-ounce package Pueblo Lindo queso fresco. Stir to combine.
- Cook for 4-5 minutes.
Pro Tip:
Roast chile peppers in large batches and freeze the extra for later. Frozen roasted poblano peppers last up to 5 months in the freezer.Defrosting a frozen pepper will save on time in making this soup.
Instead of a poblano pepper, swap out of canned green chiles.
- Add the 4 cups of milk.
- Cook for 5 minutes.
Once the milk is poured in, be sure to scrape the bottom of the pan.
I paid $3.39 for this Simply Nature Organic Milk. At another store in my area, I would’ve paid $4.49.

- Add 1 cup frozen corn.
- Dilute 1 tbsp cornstarch in 4 tbsp water, and add to the pot.
- Simmer for 10 minutes, or until the potatoes are soft.
Frozen corn or fresh corn? Whatever you like. Frozen corn, you can find all year long, and it cooks up fast.
If using fresh corn, it will take longer to cook. Add fresh corn along with the poblano pepper and cheese.
Caldo de Queso never lasts long at my house. It’s absolutely DELICIOUS! My son likes it served with a spoonful of sour cream.
I like it because I got all the ingredients at ALDI, and it doesn’tbreak the bank.

We love mexican food but this is the first time I heard about the crema de frijol negro…we do eat black bean noodles occasionally ,so I’m sure we’ll love this too!
The other ones sounds like caldero de keso in our language and I’m a cheesehead – so a pot of cheese for me would be perfect. 😀 😀
