I share custody of my son, and we alternate holidays. This Easter, he is with his father. Easter at my house means meatless and usually spicy. We don’t have the Easter ham. It’s filled with religious, Mexican traditions that I enjoy. Since I don’t have my son this year, I’ll be staying home in classy San Diego and far away from any family members. Mostly, I’ll be alone cuddled up next to my cat, Friday. That’s why when I saw the Bigelow Tea Sweepstake, “Pamper mom (or yourself),” I decided to stop feeling sorry for myself. Single moms should treat themselves during childless holidays.
I treat myself within my means. I’m on a single mom budget after all. The other day at Walmart, I started thinking about how I’m going to do this exactly. I realized that I cook for everyone else but me. I should cook something yummy and delicious that I LOVE. And ya’ll know me: I’m the creative cook. I made a ridiculously yummy Tortilla Soup using Bigelow Tea.
Tortilla Soup Using Bigelow Tea
2 cup water
1 bag of Bigelow Tea – lemon
2 cups vegetable broth
2 carrots, sliced
½ lb green beans, chopped
½ onion, diced
pinch of whole cumin
pinch of dried oregano
1 tablespoon paprika
½ teaspoon chile de arbol
2 tortillas, sliced
1 avocado (garnish)
In a large stock pot, add 2 cups of water. Bring to a boil. Add Bigelow teabag and let it sit for a few minutes. Remove teabag. Add vegetable broth and all the veggies and spices. Bring to a boil and let it simmer for 10 minutes. Spoon into a bowl and top with tortillas and avocado.
While the tea is brewing, get all the ingredients together. I had these veggies on hand but feel free to use whatever you like.
Here is what the soup looks like before you add the tortillas and top it with avocado. I could eat this soup just like this.
This soup is a little out of the box, and it’s so delicious.
