Quick Snacks: Sneaky Peas Guacamole

Ugh. Is summer over already? I’m not looking forward to the rush here, rush there of school. When my Little Red gets home from school, he takes off his shoes and rushes to the kitchen cupboard for quick snacks. That kid can eat… let me tell you! I would prefer to give him something to pull him over for a few hours until dinner time at 6pm. Not just a pack of raisins, if you get my drift.

On my last trip to Walmart, I picked up some quick snacks that I know my son loves. Bagel Bites. YUM! Bagel Bites are made with real cheese and homemade sauce with 0g trans fat. They are perfect for busy moms like me. I also bought some Delimex taquitos. Algunos taquitos para picar después de la escuela, ¿por qué no?

Sneaky Peas Guacamole

Ingredients:
2 avocados, pitted and cubed
1 green onion, tops only
juice of 1 lime
¼ cilantro bunch
salt
½ cup peas

Directions:
Mash the avocados and add the green onions, lime, cilantro, and salt. In a small bowl, mash the peas. Then add peas to the avocado and mix well. Enjoy!

Sneaky Peas Guacamole and guacamoloe

As a kid, when I would get home from school, my mom would make us guacamole. We had a lot of guacamole growing up. I’m one lucky gal, that’s for sure. Even though I’m rushing around making quick snacks, I’ll make my son this Sneaky Peas Guacamole.

This is a recipe I put together for my son’s palate not mine. He is 7 and can’t handle spice. There’s no jalapeño. Sniff! I love spicy food! The spicier, the better.

Are you a sneaky mom? I am! Hee hee… You gotta get veggies in where you can. I used frozen peas here, but to save time, use baby food. Even broccoli puree might work. I guess carrots would work too, but I’m thinking green here to sneak it in better. And don’t add too much, or you’ll change the flavor.

Delimex taquitos

These babies go into the oven. OR, you can stick them in the microwave for 1 minute. Easy! Easy! Easy! They go great with Sneaky Peas Guacamole.

    Love the addition of peas here! I’m going to pass along this recipe to my sister so she can try it out on her son who insists on having nothing to do with peas..he’s quite the stubborn one.

      Try it with baby food peas. It’s smoother. Hope he likes it. 🙂
