How to Make the Bean Salad
This Bean Salad is very versatile and very forgiving.
You can use whatever type of beans you prefer – kidney, pinto, garbanzo, lima, etc.
Bean Salad
- Drain the cans of beans and corn.
- Mix with beans, corn, tomatoes, and cilantro.
- Set aside until ready to use.
This is a great party recipe. Also, it keeps for several days.
Another great idea, especially for those of you who like spice, add a diced jalapeno.
Or for mild heat, use diced green peppers.
- Mix the lime, oil, and salt.
- Drizzle over the bean mixture.
- Combine and set aside until ready to serve.
How easy was that! It literally takes minutes to come together.
One useful tip is that the longer this salad sits, the better the flavors develop.
Creamy Chipotle Tuna Salad
The Creamy Chipotle Tuna Salad is just as delicious.
Not a fan of tuna? Try making it with cooked chicken instead.
To make the Creamy Chipotle sauce:
- Mix mayo, chipotle pepper, salt, and garlic powder.
- Stir to combine and set aside.
If you are not using it right away, stick the mayo sauce in the fridge.
- Add the chipotle sauce to the tuna.
- Mix to combine.
Mix the chipotle sauce and the tuna together.
Be sure to taste for salt and heat level.
For a spicier sauce, add two chipotle peppers.
Serve with plenty of chips and enjoy!
