    Meal Prepping Two Mexican Recipes

    These recipes for Bean Salad and Creamy Chipotle Tuna Salad were made with ingredients I purchased at ALDI.

    They’re super tasty, easy-to-make, and don’t’ break the bank.

    Take a look into my recent grocery trip and how to make these two yummy dishes.

    One of my favorite things to buy at ALDI are the Simply Nature beans.

    They cost only $0.89 cents at ALDI. At another local grocery store, they would have cost $1.49 This is one of the many reasons why I like to shop at ALDI because they help Latino families by offering quality products at incredibly low prices every day.

    Another favorite item to buy at ALDI is the Pueblo Lindo Chipotles in Adobo Sauce. It costs only $0.99 cents! What a steal!

    At another local grocery store, a can of chipotles in adobo sauce costs $1.99. That’s half the cost!

    These are high quality products at everyday low prices. If you haven’t gone to ALDI supermarkets yet, swing by, get to know them. It will surely become one of your favorite stores.

    The best part about ALDI? Their top priority is the well-being of the communities they serve.

    That’s why no products of their exclusive ALDI brands contain artificial colors or have any added monosodium glutamate or MSG nor do they contain added trans-fats which are still found in so many products out there.

    How to Make the Bean Salad

    This Bean Salad is very versatile and very forgiving.

    You can use whatever type of beans you prefer – kidney, pinto, garbanzo, lima, etc.

    Bean Salad

    • Drain the cans of beans and corn.
    • Mix with beans, corn, tomatoes, and cilantro.
    • Set aside until ready to use.

    This is a great party recipe. Also, it keeps for several days.

    Another great idea, especially for those of you who like spice, add a diced jalapeno.

    Or for mild heat, use diced green peppers.

    Bean salad in a large white bowl and a serving spoon.

    • Mix the lime, oil, and salt.
    • Drizzle over the bean mixture.
    • Combine and set aside until ready to serve.

    How easy was that! It literally takes minutes to come together.

    One useful tip is that the longer this salad sits, the better the flavors develop.

    Creamy Chipotle Tuna Salad

    The Creamy Chipotle Tuna Salad is just as delicious.

    Not a fan of tuna? Try making it with cooked chicken instead.

    To make the Creamy Chipotle sauce:

    • Mix mayo, chipotle pepper, salt, and garlic powder.
    • Stir to combine and set aside.

    If you are not using it right away, stick the mayo sauce in the fridge.

    • Add the chipotle sauce to the tuna.
    • Mix to combine.

    Mix the chipotle sauce and the tuna together.

    Be sure to taste for salt and heat level.

    For a spicier sauce, add two chipotle peppers.

      I miss traveling and eating local foods during travel. I have been cooking, well learning to cook and glad I came over this recipe, I will definitely try this out! Excited to have some Mexican dishes!
