I started to notice that whenever I eat a muffin or pancakes in the morning (even though I love it), I get hangry! At 11am, I’m like… FEED ME NOW! But whenever I ate eggs or smoked salmon in the morning, I was fuller longer and the people around me were safe from the Hangry Maggie Monster. 😛 I started poking around Pinterest and found a healthy breakfast idea: Berry Almond Quinoa Bowls. It doesn’t make me want to eat the first thing in front of me, and it’s kinda sweet to satisfy my sweet tooth. Win! Win!
Quinoa for breakfast is like … WHAT?! I know. I’m used to making a big pot of the light, fluffy stuff at the beginning of the week, then taking it out for quick easy lunches. Never did it cross my mind to use it for a healthy breakfast. Carbs spike your sugar level and have very little nutritional value. Protein, on the other hand, keeps you going longer. Move over, Energizer Bunny! I’ve made it a few times, and my Little Red actually ate it. Three cheers to that!
I love berries BERRY much! 😀 Unless they’re in season, frozen berries are usually cheaper than the fresh ones. Almonds … I live in a house full of nuts. 😉 We always have almonds, peanuts, cashews, macadamia nuts around because they make a great snack. I added them for the texture and the extra protein. If you’re down with Greek yogurt, you can swap it out for the non-fat milk or almond milk. Greek yogurt is a great source of protein. Opa!

Healthy Breakfast: Berry Almond Quinoa Bowl
- Heat quinoa in the microwave for a few minutes.
- Warm up the milk.
- Divide quinoa in 2 bowls.
- Top each with fruit and almonds.
- Drizzle with honey (if using).
- Add warmed milk.
