Sometimes, I don’t know how I keep it all together. I’m lucky enough to work from home. I often get the “You’re so lucky to work from home,” but really, I think it might be harder. If you’re one of the “lucky” ones to work from you, you understand how hard it is to schedule your time, make sure you turn everything in, juggle conference calls while doing laundry, always being at work… etc. etc. etc. To top it all off, I’m a single mom. And even though I’m a food blogger, there are many nights when the last thing I want to do is cook.
I was picking up my Little Red from his dad’s house when I decided to stop at the local Fresh and Easy. There are several Fresh and Easy throughout CA, AZ, and NV. I knew dinner was coming up, and I had no idea what was in the frig. Take out and drive thrus are considered “sometimes food” in my book. I wanted something fast and healthy.
A salad was in order. I also picked up a Fresh and Easy Creamy Cilantro Dressing. My Little Red won’t eat salad without a good salad dressing.
I was so tempted to just go here, but if I have enough time, I prefer to make dinner. They have organic meals ready to go home with you and spare you from washing dishes. Love that!
I know my son will eat spaghetti and meatballs. It’s fast; it’s easy.
As you can imagine, I make my own spaghetti sauce. Even when I’m rushed, I will still put it together. The taste is so much better than the jar stuff, and Fresh and Easy has organic tomatoes for a good price.

I just love the name “Fresh and Easy”, Maggie.
As a child, however, my dad insisted on two vegetables at dinner every night PLUS a salad. If those elements were not in place, he was not pleased. That nutritional upbringing still influences me today. Being “forced” to eat my veggies as a kid now makes me feel incomplete if there is not an abundance of them at dinner. 😉
